Serves 4 4 Russet potatoes 1/2 large yellow onion 1/2 red or yellow bell pepper 1 medium tomato 1 tbsp paprika 2 tsp salt 1 tbsp canola oil 1 cup water peel and slice potatoes lengthwise into 1 inch wide wedges. peel and finely chop the onion. dice the bell pepper and the tomato. in a 3 qt saucepan heat the oil and saute the onion, salt, bell pepper and tomato until the onion is soft, about 5 minutes. add the paprika and the 1 cup of water and stir together. add the potatoes, stir, and then heat to simmer for approximately 20 minutes or until the potatoes are cooked (still slightly firm). serve as a main dish with French bread and a salad of your choice.
